Quinoa Spinach Salad with Mango



Who doesn't love a quinoa salad!? This is one the whole family will enjoy.

In a sauce pan combine 2 1/2 cups quinoa with 5 cups water. Bring to boil, cover, and simmer for about 15 minutes. You'll know when the quinoa is done when the little tails pop out.

While the quinoa is simmering, chop 1 cucumber, 4 green onions, 1 mango, and 4 cups of fresh baby spinach.

In a small bowl whisk 1/2 cup olive or grapeseed oil, 4 T white wine vinegar, and 3 tsp. curry powder.

Toss the quinoa with the chopped veggies and then add the dressing and toss until it is well blended.

Serves 6
